Passion Pita Pizzas ~

Our Good Friday Meal ~

First we took a pita and discussed how the stripes remind us of Our Lord's scourged body and that by His stripes we are healed.
We are also thankful that He gives His body to us in the Holy Eucharist to streghten us along our journey.

We brushed the pita bread with olive oil for He was arrested in the Garden of Olives.
(I bake these at 425 for about 5-8 min to get them crispy)

Next we spread the pizza sauce to represent the blood He shed for us and for all so that sins may be forgiven.

The white cheese and mushrooms were added to represent purity from sin.


We added green bellpepper in the shape of a cross to represent life. 


Black Olives were added for His 5 Wounds.


Onions were added last to represent tears shed.


I sprinkled a little more cheese on the top and baked them for about 10 min., keeping an eye on them so they didn't burn.

They are very symbolic and yummy!

Cranberry, Pumpkin, and Apple Pie Thanksgiving

We’ve been enjoying ourselves in the kitchen these past couple of days.  Buck, Honeybee and I started off by reading Cranberry Thanksgiving and P is for Pilgrim.
First we baked these cute little Turkey Sugar Cookies.

We even had a little “unschooling” lesson on measurements, placing them 2” apart on the cookie sheet.

Next we started on Grandmother’s Famous Cranberry Bread.  You can find this recipe in the back of Cranberry Thanksgiving.

Buck enjoyed sifting the dry ingredients.
Honeybee stirred in the Craisins.  We went with these instead of using both raisins and cranberries.  We also doubled the butter…It is Thanksgiving!!

This bread turned out wonderful!!  No wonder Mr. Hoarce was trying to steal the recipe Winking smile 
We are definitely adding this to our traditional menu.

Snuggle Bug made her traditional Pumpkin Pies ~
(We make two pies from this recipe)

and The House Cat sliced lots of apples to make her daddy’s favorite Apple Pies.
(We use prepared crusts)

Granny and Papa came in last night and we enjoyed hanging out watching I Love Lucy re-runs. This morning we cooked a feast.
Granny seasoned up the turkey breast – Cajun style.

She actually picked up the dressing from Piggly Wiggly on her way.  I have to admit it was delicious!  She is a great cook but, likes their cornbread dressing more than her own.

By the way she makes the most delicious fruit salad.

Here’s the recipe ~
4 lg Oranges or 6 sm., remove all pulp then add 1/4 to 1/2 cup of sugar depending on the sweetness of the oranges. 
Add ~
2 Bananas, sliced
1 Can of Mandarin oranges, drained
1 Can (Oregon) Thompson grapes, drained
1 Can  Pineapple tidbits, drained
1 jar Maraschino cherries, drained
8 oz. carton Sour Cream
Mix all together and refrigerate.

More Saint David's Day fun ~

Yesterday was one of those beautiful "real learning" type of days!
I take no credit for it!!!

It all began with morning prayers and reading about the Saint of the day.
I visited some of the links Waltzing Matilda had posted on Saint David and

God took it from there....
The little ones had a great time making Saint David and knight figures.
They accompanied me to the store and found leeks to cook for supper.
Snuggle Bug was a huge help chopping potatoes and bacon for the soup, which hubby said was delicious!


The House Cat found this poem and Snuggle Bug dictated it to her as she wrote it on this pretty paper. 

They also learned a lot from these Enchanted Learning sheets.

Poor Man's Dip

I was thinking of how many people make black-eyed peas for prosperity on New Year's Day.  We normally eat them too, with cabbage and cornbread.  I think the tradition is for health, wealth, and happiness or something like that.  Tomorrow we will share the same with Mama.  We will take along this Poor Man's Dip with us when we go.  I think it will be a perfect addition for our New Years gathering.  It's so simple to put
together ~

1 small bell pepper, chopped
1/2 small purple onion, chopped
2 can's black eyed peas (drained)
1 can shoe peg corn
8 oz bottle of Italian dressing

Mix all together and chill overnight.  Serve with Frito Scoops.




This is really the perfect dish for tomorrow.  May we all be poor in spirit, as the first beatitude states, remembering we can do nothing without God.  A Blessed New Year to You All!

Honey Trail Mix on the feast of St. Ambrose

The girls and I snacked on Honey Trail Mix this afternoon while we read aloud the story of Saint Ambrose from Once Upon A Time Saints.

Saint Ambrose's words were said to be sweeter than honey from the comb. 

To make this yummy snack you need ~

2 cups corn chex
2 cups rice chex
1 cup mini pretzels
Mix these together in a large microwaveable bowl.
In a measuring cup, mix together 1/4 cup honey and 3 Tlbs. oil. 
Pour over cereal/pretzel mixture.
Stir and microwave for 5 to 6 minutes, stirring every 90 seconds.
Serve and enjoy!

Turkey Day Fun

These Oreo Turkey cookies were fun to make while the turkey baked.  Notice how Buck gave his' wings?  :)

These oreo turkeys were a strike!

Happy Birthday Sweetheart!

Today is my honey's birthday.  

 The kids started off the day painting a banner for him.



Then we wrapped his presents and made cards.

Next, it was time to make his cake  dessert,
Lemon Lush.
The crust was made first. (1 stick of margarine, 1 cup self rising flour, 1/2 cup chopped pecans.  Mix, press into 9x13 pan, and bake at 400 degrees for 15 min.  Once that has cooled, you're ready for step 2)

Mix 1 cup of powdered sugar,
1 cup of Cool Whip, and an 8 oz pkg of cream cheese (room temp).  Spread over layer one.

Next, mix together 2 pkgs of Jello Instant Lemon Pudding Mix with 2 cups milk and layer over cream cheese layer.
Smooth that out and add a top layer of Cool Whip.
Chill and enjoy.
